How to Make Appam

Step 1: Preparing the Batter

  1. Soak the raw rice in water for about 4-5 hours.
  2. Drain and blend the soaked rice with cooked rice, grated coconut, and water until smooth.
  3. If using yeast, dissolve it in warm water with a pinch of sugar and let it activate for 5-10 minutes.
  4. Add the yeast mixture (if using) to the batter along with sugar and salt.
  5. Let the batter ferment overnight or for at least 8 hours, until it becomes airy and slightly sour.

Step 2: Cooking

  1. Heat an appam pan (appa chatti) on medium heat and lightly grease it.
  2. Pour a ladleful of batter into the center and swirl the pan to spread it into a thin layer with a thick center.
  3. Cover with a lid and cook for 2-3 minutes until the edges turn crispy and golden while the center remains soft.
  4. Remove and serve hot.

  • Stew – A coconut-based vegetable or meat stew (such as Kerala-style chicken or vegetable stew).
  • Kadala Curry – A spicy black chickpea curry.
  • Sweetened Coconut Milk – For a simple and traditional sweet touch.
