  • 100 grams cumin
  • 75 grams cardamom seeds
  • 75 grams black pepper
  • 45 grams green cardamom pods
  • 35 grams coriander seeds
  • 35 grams fennel
  • 25 grams cloves
  • 20 cinnamon sticks about 1 inch long
  • Poppy seeds 25 grams
  • 25 grams black cumin
  • 29 grams bay leaf
  • 20 grams dried rose petals
  • 3 tbsp ground ginger
  • 3 nutmeg grated

Method

Crush all the ingredients except the ground ginger and nutmeg in a mortar and pestle, or grind them in a spice grinder to a fine powder. Combine the ground ginger and nutmeg in a clean, dry bowl and mix well. Strain through a sieve and store in a sterile, dry and airtight container.
