  • 2 tablespoons raisins

For Frying and Garnishing:

  • Chopped nuts or silver varq for garnish (optional)

How to Make Meve ki Gujiya

Step 1: Prepare the Dough

  1. In a mixing bowl, combine the flour and a pinch of salt.
  2. Add ghee and rub it into the flour until the mixture resembles breadcrumbs.
  3. Gradually add water and knead into a firm yet pliable dough.
  4. Cover with a damp cloth and let it rest for 30 minutes.

Step 2: Make the Filling

  1. Heat a pan on low flame and add grated khoya. Stir until it turns light golden brown.
  2. Remove from heat and let it cool slightly.
  3. Mix in powdered sugar, chopped nuts, desiccated coconut, cardamom powder, and raisins.
  4. Ensure the filling is well combined and aromatic.

Step 3: Shape the Gujiyas

  1. Divide the dough into small equal portions and roll each into a thin disc.
  2. Place a spoonful of the prepared filling at the center.
  3. Fold the disc into a semi-circle and seal the edges by pressing firmly or using a gujiya mold.
  4. For extra security, crimp the edges with a fork.

Step 4: Fry the Gujiyas

  1. Heat oil or ghee in a deep pan over medium heat.
  2. Fry the gujiyas in batches until golden brown and crispy.
  3. Remove and drain excess oil on paper towels.

Step 5: Serve and Enjoy

  1. Once cooled, garnish with chopped nuts or silver varq.
  2. Serve warm or store in an airtight container for up to a week.

Tips

  • Ensure the dough is not too soft; a firm dough helps achieve a crisp outer layer.
  • Seal the edges properly to prevent the filling from spilling out while frying.
  • Fry on medium heat to ensure even cooking and a crispy texture.
  • You can bake the gujiyas at 180°C (350°F) for 20-25 minutes as a healthier alternative.
