Ingredients:

  • 1 cup gram flour (besan)

  • 2 cups sugar
  • 1/2 cup water
  • 1/2 teaspoon cardamom powder (optional)

Instructions:

Step 1: Prepare the Besan

Sieve the gram flour to remove lumps and ensure a smooth texture. Dry roast it in a pan on low heat for a couple of minutes until it releases a nutty aroma. This step enhances the flavor of the Mysore Pak.

Step 2: Make the Sugar Syrup

In a heavy-bottomed pan, add sugar and water. Stir continuously on medium heat until the sugar dissolves completely and reaches a one-string consistency. To check, take a drop of syrup between your fingers and stretch—it should form a thin string.

Step 3: Incorporate Gram Flour

Gradually add the roasted gram flour to the sugar syrup while stirring continuously to prevent lumps. Keep the heat on low to medium.

Step 4: Add Ghee

Heat the ghee separately and slowly pour it into the gram flour mixture, stirring continuously. Continue cooking until the mixture thickens and starts leaving the sides of the pan.

Step 5: Set and Cool

Transfer the mixture to a greased tray and spread evenly. Allow it to cool for a few minutes, then cut into square or rectangular pieces before it hardens completely.

Tips for Perfect Mysore Pak:

  • Stir continuously to avoid lumps and ensure even cooking.
  • Use fresh ghee for the best aroma and taste.
  • If you prefer a softer version, increase the amount of ghee slightly.
