Origin of Nacho Chips

The story goes that Ignacio “Nacho” Anaya, a maître d’ at a restaurant in the border town of Piedras Negras, invented the dish when a group of American military wives came to the restaurant and asked for breakfast. However, the kitchen was closed, so Anaya took some fried corn tortillas, melted cheese on top of them, and topped them with sliced jalapeño peppers.
The dish became an instant hit and Anaya started serving it regularly at her restaurant. He named the dish “Nachos Especiales” after his own nickname, Nacho, and the dish quickly became popular on both sides of the border.
Nachos continued to grow in popularity in the decades that followed, with various variations and toppings added over time. .

Ingredients:
- 1 bag of corn tortilla chips

- 1/4 cup chopped tomatoes
- 1/4 cup chopped onion
- 1/4 cup sour cream
- 1/4 cup salsa
Instructions:

- Stack the corn tortillas one on top of the other and cut them into quarters using a sharp knife or kitchen shears.
- In a small bowl, mix olive oil, smoked paprika, garlic powder, onion powder, dried oregano, dried thyme, sea salt, and black pepper.
- Toss the tortilla quarters in the spice mixture to coat them evenly with the flavored oil.
- Spread tortilla quarters on a baking sheet lined with parchment paper or a nonstick baking mat.
- Bake the tortilla quarters in the preheated oven for 8 to 10 minutes or until they are crisp and lightly browned.
- Remove the tortilla quarters from the oven and let them cool for a few minutes.
- In a small bowl, mix crumbled feta cheese, chopped fresh parsley, chopped Kalamata olives, and chopped sun-dried tomatoes.
- Sprinkle feta cheese mixture over nacho chips.
- Serve and enjoy immediately!
