Unlike traditional dosa, which requires fermentation, Rava Dosa is made instantly with a simple batter of semolina (rava), rice flour, and all-purpose flour. It’s a perfect breakfast or snack option that pairs well with coconut chutney and sambar.

Ingredients:

  • 1 cup semolina (rava)
  • ½ cup rice flour
  • ¼ cup all-purpose flour
  • ½ teaspoon cumin seeds
  • 1 green chili, finely chopped
  • ½ teaspoon black pepper, crushed
  • 1 small onion, finely chopped
  • 1 tablespoon coriander leaves, chopped
  • ½ teaspoon salt (or to taste)
  • 2½ cups water
  • 1 teaspoon ginger, grated
  • 1 teaspoon curd (optional, for slight tanginess)
  • 1 teaspoon oil or ghee
  • Oil or ghee for cooking

Instructions:

  1. Prepare the Batter: In a large mixing bowl, combine semolina, rice flour, and all-purpose flour. Add cumin seeds, chopped green chili, black pepper, onion, coriander leaves, salt, ginger, and curd.
  2. Gradually add water and mix well to form a thin, watery batter. Let it rest for 15-20 minutes.
  3. Heat the Pan: Place a non-stick or cast-iron pan on medium-high heat. Lightly grease it with oil or ghee.
  4. Pour the Batter: Stir the batter well and pour a ladleful in a circular motion from the outer edges toward the center. Do not spread it like regular dosa; let the gaps remain for a lacy texture.
  5. Cook Until Crispy: Drizzle a little oil or ghee around the edges and cook until the dosa turns golden and crispy (about 2-3 minutes). Flip if needed and cook for another minute.
  6. Serve Hot: Remove from the pan and serve immediately with coconut chutney and sambar.

Tips for Perfect Rava Dosa:

  • Ensure the batter is thin for a crispier texture.
  • Stir the batter before each dosa, as semolina tends to settle at the bottom.
  • Adjust the spice levels with more green chilies or black pepper.
  • Use a well-heated pan for even cooking and crispiness.
