Try it as a light snack or alongside your favorite main dish—this sweet corn recipe will soon become a favorite in your kitchen!

Ingredients

  • 4 ears of fresh sweet corn (or 2 cups of canned/frozen corn kernels)
  • 2 tablespoons butter (or olive oil for a lighter option)
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon chili powder (adjust for spice preference)
  • 1/2 teaspoon paprika (smoked paprika works well too)
  • Fresh herbs (optional: 2 tablespoons chopped parsley or cilantro)
  • 1 tablespoon lemon or lime juice
  • 1/4 cup cheese (optional: grated Parmesan or crumbled cotija cheese)

These ingredients create a simple yet flavorful sweet corn dish, but feel free to adjust the spices and seasonings to your taste!

Equipment Needed

  • Cooking pan or grill: Use a large skillet for pan-frying or a grill for roasting the corn on the cob.
  • Knife and cutting board: To trim the corn, slice off the kernels (if using fresh) or chop herbs.
  • Mixing bowls: For combining the corn with seasonings and cheese, and for tossing in herbs or lemon/lime juice.

These basic tools will make it easy to prepare and cook the dish!

Preparation Steps

  1. Fresh Corn:
    • Husk the corn: Peel back the outer layers of the corn, removing the husk and silk.
    • Trim the ends: Cut off the stem of each ear of corn so they fit easily in your pan or on the grill.
    • Cut the kernels off the cob (optional): If you prefer to cook the kernels separately, use a sharp knife to slice the kernels off the cob. Hold the cob upright in a bowl and cut down along the sides.
  2. Frozen Corn:
    • Thaw the corn: If using frozen sweet corn, place it in a colander and run warm water over it to thaw. Alternatively, microwave it in a bowl for a few minutes, stirring occasionally.
  3. Canned Corn:
    • Drain and rinse: Open the can and drain out the liquid. Rinse the corn under cold water to remove any excess salt or preservatives.

Once your corn is prepared, it’s ready to be cooked!

Cooking Instructions

  1. Heat the Pan or Grill:
    • Pan: Place a large skillet over medium heat and add the butter or olive oil.
    • Grill: Preheat the grill to medium-high heat.
  2. Sauté the Garlic:
    • Once the butter or oil is heated, add the minced garlic to the pan and sauté for about 1-2 minutes, until fragrant. Be careful not to burn the garlic.
  3. Cook the Sweet Corn:
    • If using a pan:
Add the prepared sweet corn kernels to the pan with the garlic. Stir frequently, allowing the corn to cook for 6-8 minutes until it begins to slightly char and develop a golden-brown color.
    • If using a grill:
Place the husked corn on the grill and cook for about 10-12 minutes, turning occasionally, until the kernels are slightly browned and charred on all sides.
  4. Season the Corn:
Sprinkle the corn with salt, pepper, chili powder, and paprika. Stir or toss to coat the corn evenly with the seasonings.
  5. Optional Cheese and Herbs:
    • For extra flavor, sprinkle grated Parmesan or crumbled cotija cheese over the corn while it’s still hot.
    • Garnish with chopped parsley or cilantro for a fresh, herbal finish.
    • Squeeze fresh lemon or lime juice over the corn for a tangy kick.

Your sweet corn is now ready to serve! Enjoy it warm as a snack, appetizer, or side dish!

Serving Suggestions

  • Serve warm: Enjoy the sweet corn immediately after cooking for the best flavor and texture. A squeeze of fresh lemon or lime juice just before serving adds a zesty, refreshing touch that enhances the sweetness of the corn.
  • Pairing Ideas:
    • With rice: This sweet corn makes a perfect side dish alongside a bowl of fluffy rice, especially in a Mexican or Tex-Mex meal.
    • With tacos: Pair the corn with your favorite tacos, whether they’re filled with grilled chicken, beef, or roasted vegetables. The sweetness of the corn complements the savory flavors of the tacos.
    • As a standalone snack: It’s also delicious on its own as a light snack, perfect for munching on during a gathering or as an easy appetizer.

This dish is versatile and can easily adapt to whatever main dish you’re serving. Whether as a side or a snack, it’s sure to please!

Tips and Variations

  • To Make It Spicier:
    • Add cayenne pepper or jalapeño (finely chopped) while cooking the corn. Adjust the amount based on your spice tolerance.
    • Use hot sauce or a spicy chili powder for an extra kick.
    • Top the corn with chili flakes or crushed red pepper after cooking.
  • To Make It Milder:
    • Reduce the amount of chili powder and paprika. Use just a pinch for flavor without too much heat.
    • Skip the chili powder altogether and stick to a simple seasoning of salt, pepper, and garlic.
    • Use mild cheese like mozzarella or a creamy cheese like cream cheese for a more mellow flavor.
  • Additional Ingredients for Extra Flavor:
    • Bell peppers: Chop and sauté bell peppers (red, yellow, or green) along with the garlic for a sweet, crunchy texture and added color.
    • Onions: Caramelized onions or finely chopped red onions add depth of flavor to the dish. Sauté them with the garlic for a sweet and savory base.
    • Corn kernels and black beans: For a heartier version, combine the sweet corn with black beans or even roasted tomatoes for a complete side dish.
    • Cilantro and lime zest: Add a burst of citrus and freshness by incorporating lime zest and extra cilantro as a garnish.
