  • 1 Red Onion (diced)
  • 1 red pepper (deseeded and diced)
  • 300 ml water
  • 50 gram broccoli florets
  • 300 gram canned sweetcorn
  • salt and pepper
  1. Heat the oil in a large saucepan.

  2. Add the Onion, red pepper, garlic and potatoes.

  3. stir in the water

  4. Add broccoli and sweetcorn .

  5. Bring the mixture to boil, stir constantly.

  6. Then reduce the heat and simmer for about 20 minutes, or until the vegetable are tender.

  7. Season to taste and pour in to the bowls.
