Mixed bean Soup
- 1 onion, chopped
- 1 garlic clove (finely chopped)
- 1 large carrot
- 400 gram chopped tomatoes
- 1.2 lit water
- 1 tsp Oregano (dried)
- 425 gram canned mixed beans and pulses (drained)
- 2 courgattes (diced)
- 1 tsp tomato puree
- Salt and pepper
Place the prepared onion, garlic and carrot in a large saucepan.
Stir in the tomatoes ,water and Oregano.
Bring the vegetable mixture to the boil, cover and leave to simmer for 15 minutes.
Stir the mixed beans and pulses into the mixture with the courgettes, and continue to cook, uncovered , for a further 5 minutes.
Add the tomato puree to the mixture and season well with salt and pepper to taste .
Then heat through , stirring occasionally, for a further 2-3 minutes, but be careful not to allow the mixture to boil again.
Pour the soup into bowls and serve immediately
