Gobi Paratha

Gobi Paratha is a popular Indian flatbread stuffed with a flavorful filling made from grated cauliflower (gobi). Ingredients:
For the Dough:
- 2 cups whole wheat flour
- 1/2 tsp salt
- Water, as needed
- 1 tbsp oil (optional)
For the Filling:
- 2 cups cauliflower, grated
- 1 medium onion, finely chopped (optional)
- 1-2 green chilies, finely chopped (adjust to taste)
- 1 tsp ginger, grated
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp ajwain (carom seeds)
- Salt, to taste
- Fresh coriander leaves, finely chopped
- 1 tbsp lemon juice (optional)
- 1 tbsp oil for cooking the filling
Instructions:
Step 1: Prepare the Dough
- In a mixing bowl, add the whole wheat flour and salt. Gradually add water and knead the dough until it’s soft and smooth. Add a little oil if desired for extra softness.
- Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
Step 2: Make the Filling
- Heat oil in a pan over medium heat. Add cumin seeds and ajwain. Let them splutter.
- Add the grated cauliflower, ginger, green chilies, and onions (if using). Sauté the mixture for 2-3 minutes until the cauliflower softens.
- Sprinkle in the garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.
- Remove from heat and let the mixture cool down.
- Once cooled, add fresh coriander leaves and lemon juice (optional). The filling is now ready.
Step 3: Assemble Paratha
- Divide the dough into small lemon-sized balls. Roll each ball into a small disc using a rolling pin.
- Place a spoonful of the cauliflower filling in the center of the disc. Gently fold the edges over the filling to form a pouch.
- Roll the stuffed dough ball into a paratha, ensuring that the filling doesn’t spill out. Be gentle while rolling to avoid breaking the paratha.
Step 4: Cook
- Heat a tawa or griddle on medium heat. Place the rolled paratha onto the hot tawa.
- Cook for about 1-2 minutes until you see bubbles forming on the surface. Flip the paratha, drizzle a little oil or ghee on top, and cook the other side until golden brown and crispy.
- Flip again and apply oil or ghee on both sides until the paratha is cooked through.
Step 5: Serve Serve hot with yogurt, pickle, or chutney on the side. It’s a perfect accompaniment for a healthy breakfast or a satisfying meal anytime!
