Instructions

  1. Cook the Lentils
    Rinse and cook 1 cup of dried lentils in about 3 cups of water. Simmer for 20–25 minutes until tender but not mushy. Drain well and let them cool slightly.

    In a pan, heat olive oil over medium heat. Add the onion and sauté until soft, about 5 minutes. Add garlic, carrot, cumin, and smoked paprika. Cook for another 2–3 minutes until fragrant.

    In a food processor, pulse the cooked lentils a few times until partly mashed. Transfer to a large bowl. Add the sautéed vegetables, breadcrumbs, egg (or flax egg), tomato paste, and optional soy sauce. Mix until combined. The mixture should hold together; if too wet, add more breadcrumbs.
  4. Form the Patties
    Divide the mixture into 4–6 equal parts and shape into patties. Place on a parchment-lined tray and chill in the fridge for 15–20 minutes (optional but helps firm them up).
  5. Cook the Burgers
    Heat a skillet over medium heat with a little oil. Cook patties for 4–5 minutes on each side until browned and heated through. You can also bake them at 375°F (190°C) for 20–25 minutes, flipping halfway through.
