  • 4 cloves garlic, minced

  • Salt and pepper to taste

Instruction:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add eggplant and zucchini to skillet and cook, stirring occasionally, until lightly browned, about 10 minutes.
  4. Add the paprika and garlic to the wok and cook for another 5 minutes.
  5. Add the chopped tomatoes to the pan and cook for 5 minutes or till the vegetables are soft and well combined.
  6. Stir in fresh thyme and rosemary, and season with salt and pepper to taste.
  7. Transfer the vegetable mixture to a large baking dish, cover with foil and bake in the preheated oven for 30 minutes.
  8. Remove foil and bake for 15-20 minutes or until vegetables are tender and lightly browned on top.
  9. Serve warm or cold, garnished with fresh herbs if desired.
