INGREDIENTS
250 gram flour
1 medium-sized tomato, finely chopped
4-6 green chillies, de-seeded and finely chopped
1 teaspoon cumin seeds
1/2 bunch coriander leaves, chopped
125ml vegetable oil, for frying

Method
1.Put the flour in alarge bowl and stir enough water to make a smooth batter. It should have a thin pour. Season with salt and beat lightly with a fork for 1 minute.
2.Heat 1 tablespoon oil in a non-stick frying pan. When hot,pour in a ladleful of the batter and tilt the pan slightly to spread it over the base into a circular pan cake. For for about 2 minutes, or until brown on one side, then turn the pancake over, adding more oil if requied and fry for a further 2 minutes, or until brown. Remove from the pan and keep warm in a low oven. Make the others in the same way, adding more oil as needed.
