Cheela, also known as Chilla, is a savory Indian pancake made from gram flour (besan) or other healthy flours, combined with spices and vegetables. This quick and nutritious dish is perfect for breakfast or a light meal. It is not only delicious but also rich in protein, fiber, and essential nutrients, making it a great option for a wholesome diet.

Ingredients:

For Basic Besan Cheela:

  • 1 cup gram flour (besan)
  • 1/2 cup water (adjust as needed)
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 green chili, finely chopped (optional)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 1/4 teaspoon garam masala (optional)
  • 2 tablespoons coriander leaves, chopped
  • 1/4 teaspoon carom seeds (ajwain) for better digestion
  • 1 teaspoon ginger, grated
  • Oil or ghee for cooking

Optional Variations:

  • Moong : Soak and blend moong dal instead of besan for a high-protein version.
  • Oats : Mix powdered oats with besan for extra fiber.
  • Paneer : Add crumbled paneer for a protein boost.
  • Spinach or Methi: Add finely chopped spinach or fenugreek leaves for added nutrition.

Instructions:

  1. Prepare the Batter: In a mixing bowl, add gram flour, turmeric, cumin seeds, red chili powder, carom seeds, garam masala, and salt. Gradually add water while stirring continuously to form a smooth, lump-free batter.
  2. Add Vegetables: Mix in chopped onions, tomatoes, green chili, ginger, and coriander leaves. Let the batter rest for 5–10 minutes.
  3. Heat the Pan: Grease a non-stick or cast-iron pan with a little oil. Heat it over medium flame.
  4. Cook : Pour a ladleful of batter onto the pan and spread it evenly into a thin pancake. Drizzle a few drops of oil around the edges.
  5. Flip and Cook: Cook for 2–3 minutes on one side until golden brown. Flip and cook the other side until crisp.
  6. Serve Hot: Remove from the pan and serve hot with mint chutney, yogurt, or tomato ketchup.

Tips :

  • Ensure the batter is of pouring consistency, neither too thick nor too runny.
  • For a crispy texture, cook on medium heat and spread the batter thinly.
  • You can make a stuffed cheela by adding grated paneer or mashed potatoes inside before folding.

  • Enjoy besan cheela with a side of green chutney or pickle.
  • Pair it with curd or lassi for a complete meal.
  • Serve as a wrap with stuffing like paneer, mushrooms, or mixed veggies for a hearty snack.
