Aloo Paratha is one of the most loved North Indian breakfast dishes, enjoyed with a dollop of butter, yogurt, or pickles. This stuffed flatbread is filled with a flavorful mashed potato mixture and cooked until golden brown. Here’s how you can make it at home.

Ingredients

For the Dough:

  • 2 cups whole wheat flour
  • ½ teaspoon salt
  • ¾ cup water (adjust as needed)
  • 1 teaspoon oil or ghee

For the Filling:

  • 3 medium potatoes (boiled and mashed)
  • 1 green chili (finely chopped)
  • ½ teaspoon red chili powder
  • ½ teaspoon cumin powder
  • ½ teaspoon garam masala
  • ½ teaspoon amchur (dry mango powder)
  • 2 tablespoons coriander leaves (chopped)
  • Salt to taste

For Cooking:

  • Ghee or butter (for frying)

Instructions

Step 1: Prepare the Dough

  1. In a mixing bowl, combine whole wheat flour and salt.
  2. Gradually add water and knead into a smooth, soft dough.
  3. Add oil or ghee and knead for another minute.
  4. Cover and let it rest for 20-30 minutes.

Step 2: Make the Filling

  1. Mash the boiled potatoes and mix with green chili, red chili powder, cumin powder, garam masala, amchur, coriander leaves, and salt.
  2. Mix well to form a uniform stuffing.

Step 3: Roll and Fill the Paratha

  1. Divide the dough into equal portions and roll each into a small ball.
  2. Flatten one ball and roll it into a 4-inch circle.
  3. Place 2 tablespoons of potato filling in the center.
  4. Gather the edges and seal the filling inside.
  5. Gently roll out into a 6-7 inch circle, being careful not to break the paratha.

Step 4: Cook the Paratha

  1. Heat a tawa (griddle) over medium heat.
  2. Place the rolled paratha on the tawa and cook for about 1 minute until bubbles appear.
  3. Flip and apply ghee or butter on the cooked side.
  4. Cook the other side, applying ghee as needed, until golden brown spots appear.
  5. Flip once more and cook until crispy.

Serving Suggestions

  • Serve hot with butter, yogurt, or pickles.
  • Pair it with a glass of lassi for an authentic Punjabi meal.
