Ingredients

  • 2 tablespoons coriander seeds

  • 10-12 dried red chilies (adjust according to spice preference)
  • 1 teaspoon asafoetida (hing)
  • 2 tablespoons chana dal (split chickpeas)
  • 1 tablespoon urad dal (split black gram)
  • 1 teaspoon fennel seeds (optional, for added aroma)
  • 10-12 curry leaves (dried or fresh)
  • 1 teaspoon salt (optional, for seasoning)

Instructions

Step 1: Dry Roast the Spices

  1. Heat a pan on medium heat.
  2. Dry roast coriander seeds, cumin seeds, mustard seeds, and fenugreek seeds until they turn aromatic. Remove and set aside.
  3. In the same pan, dry roast black peppercorns and dried red chilies for a minute.
  4. Add chana dal and urad dal, roasting them until they turn golden brown.
  5. Toss in fennel seeds, curry leaves, and asafoetida, stirring for a few seconds before turning off the heat.

Step 2: Cooling and Grinding

  1. Allow the roasted spices to cool completely.
  2. Transfer them to a blender or spice grinder and grind into a fine powder.
  3. Mix in turmeric powder and salt (if using).
  4. Store in an airtight container in a cool, dry place.
