Suji Halwa, also known as Sheera in some regions, is a classic Indian dessert made with semolina (suji), ghee, sugar, and nuts.   1. Roasting the Suji: Heat ghee in a heavy-bottomed pan or kadhai over low-medium heat. Add the suji and roast it slowly, stirring continuously until it turns golden brown and emits a nutty aroma. This step is crucial to achieving a well-flavored halwa.
  2. Preparing the Sugar Syrup: In a separate saucepan, bring water (or milk) to a boil. Add sugar and saffron strands (if using), and stir until the sugar dissolves completely.
  3. Combining the Ingredients: Slowly pour the hot sugar syrup into the roasted suji while stirring continuously to avoid lumps. Be cautious, as the mixture may splutter.
  4. Cooking the Halwa: Keep stirring and cook until the suji absorbs the liquid completely and starts leaving the sides of the pan. Stir in the cardamom powder and mix well.
  5. Adding Dry Fruits: In a small pan, heat a teaspoon of ghee and lightly fry the cashews, almonds, and raisins. Add them to the halwa and mix well.
  6. Serving: Serve warm, garnished with extra nuts if desired. Enjoy it as is or pair it with puris for a classic festive treat.
