Ingredients

For the tofu:

  • 1 block (14 oz) firm or extra-firm tofu, pressed and cubed
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tbsp oil (for pan-frying or air-frying)

For the glaze:

  • 2 tbsp soy sauce
  • 1 tbsp maple syrup or honey
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp chili flakes (optional)
  • 1 clove garlic, minced
  • 1/2 tsp grated fresh ginger

For the salad:

  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 cup shredded carrots
  • 1/2 red bell pepper, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 2 tbsp roasted peanuts or cashews
  • 1 tbsp sesame seeds (optional)
  • Fresh cilantro or mint (for garnish)

For the dressing:

  • 2 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup or honey
  • 1 tsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Prepare the tofu:
Press tofu for at least 15–20 minutes to remove excess moisture. Cut into bite-sized cubes and toss with cornstarch and soy sauce.
  2. Cook the tofu:
Heat oil in a skillet over medium-high heat. Cook the tofu until golden and crispy on all sides (or air-fry at 400°F/200°C for 15 minutes, shaking halfway through).
  3. Make the glaze:
In a small saucepan, combine glaze ingredients and simmer for 2–3 minutes until slightly thickened. Toss the crispy tofu in the glaze to coat evenly.
  4. Mix the salad:
In a large bowl, combine greens, carrots, bell pepper, cucumber, and herbs. Add in the glazed tofu.
  5. Make the dressing:
Whisk together all the dressing ingredients and drizzle over the salad. Toss gently to coat.
  6. Top it off:
Sprinkle with peanuts, sesame seeds, and extra herbs. Serve immediately.

Tips & Variations

  • Meal Prep Friendly: Store tofu, dressing, and veggies separately. Combine before eating.
  • Add Grains: Serve over quinoa, rice, or rice noodles to make it extra filling.
  • Spicy Kick: Add a chopped chili or a dash of sriracha to the glaze or dressing.
  • Nut-Free: Use sunflower seeds or skip the nuts entirely.

This Tofu Salad is light yet satisfying, perfect for lunch, dinner, or even as a party dish. It’s colorful, crunchy, and totally crave-worthy. Even tofu skeptics might find themselves going back for seconds!
