Instructions
Step 1: Prep the Rice
If using freshly cooked rice, spread it on a plate to cool so it doesn’t turn mushy. Leftover rice works great too.
Step 2: Make the Tomato Masala
- Heat oil in a pan. Add mustard seeds and let them crackle.
- Add urad dal, curry leaves, hing, and green chilies. Sauté for a few seconds.
- Toss in sliced onions and sauté until golden.
- Add ginger garlic paste and cook until the raw smell disappears.
- Now add chopped tomatoes, turmeric, red chili powder, coriander powder, and salt.
- Cook until the tomatoes break down and oil starts to separate from the masala.
Step 3: Mix and Serve
- Add the cooled rice to the pan and gently mix until all the grains are coated with the masala.
- Check seasoning and adjust salt/spice if needed.
- Garnish with chopped coriander.
Serving Suggestions
- Serve it hot with papad, raita, or a simple cucumber salad.
- Pair with boiled eggs or a fried egg for a protein boost.
- Tastes great with pickle or a spoon of ghee on top.
Tips & Variations
- Add vegetables like peas or grated carrots to make it more nutritious.
- Use ghee for a richer flavor.
- For extra heat, add a pinch of garam masala or crushed pepper at the end.
- Can be made in a pressure cooker or Instant Pot too.
