  • 1 tsp urad dal (optional)
  • 1/4 tsp hing (asafoetida)
  • 1 sprig curry leaves
  • 2 green chilies (slit)
  • 1 medium onion, thinly sliced
  • 1/2 tsp ginger garlic paste
  • 2–3 medium tomatoes, finely chopped
  • 1/4 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • 1 tsp coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Optional Tempering Add-ins:

  • 1/4 tsp cumin seeds
  • 1 dry red chili
  • Cashews or peanuts for crunch

Instructions

Step 1: Prep the Rice

If using freshly cooked rice, spread it on a plate to cool so it doesn’t turn mushy. Leftover rice works great too.

Step 2: Make the Tomato Masala

  1. Heat oil in a pan. Add mustard seeds and let them crackle.
  2. Add urad dal, curry leaves, hing, and green chilies. Sauté for a few seconds.
  3. Toss in sliced onions and sauté until golden.
  4. Add ginger garlic paste and cook until the raw smell disappears.
  5. Now add chopped tomatoes, turmeric, red chili powder, coriander powder, and salt.
  6. Cook until the tomatoes break down and oil starts to separate from the masala.

Step 3: Mix and Serve

  1. Add the cooled rice to the pan and gently mix until all the grains are coated with the masala.
  2. Check seasoning and adjust salt/spice if needed.
  3. Garnish with chopped coriander.

Serving Suggestions

  • Serve it hot with papad, raita, or a simple cucumber salad.
  • Pair with boiled eggs or a fried egg for a protein boost.
  • Tastes great with pickle or a spoon of ghee on top.

Tips & Variations

  • Add vegetables like peas or grated carrots to make it more nutritious.
  • Use ghee for a richer flavor.
  • For extra heat, add a pinch of garam masala or crushed pepper at the end.
  • Can be made in a pressure cooker or Instant Pot too.
