  • 2-3 green cardamom pods
  • 1 small cinnamon stick
  • 1 teaspoon cumin seeds
  • 1 medium onion (thinly sliced)
  • 1 teaspoon ginger-garlic paste
  • 1 green chili (slit, optional)
  • ½ cup mixed vegetables (peas, carrots, beans, optional)
  • 1 medium tomato (chopped)
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 cups water or vegetable stock

For Garnish:

  • Fresh coriander leaves (chopped)
  • Fried cashews (optional)

Instructions:

Step 1: Prepare the Paneer

  1. Heat a tablespoon of ghee or oil in a pan.
  2. Lightly sauté the paneer cubes until golden on all sides. Remove and set aside. This step enhances the flavor of the paneer and prevents it from breaking in the pulao.

Step 2: Cook the Spices

  1. In the same pan, heat another tablespoon of ghee or oil.
  2. Add the bay leaf, cloves, cardamom, cinnamon, and cumin seeds. Sauté for a few seconds until fragrant.
  3. Add the sliced onions and cook until golden brown.
  4. Stir in the ginger-garlic paste and green chili. Cook for another minute.

Step 3: Add Vegetables and Spices

  1. Add the chopped tomato and cook until it turns soft and mushy.
  2. Mix in the turmeric powder, garam masala, and salt.
  3. Add the mixed vegetables (if using) and cook for 2-3 minutes.

Step 4: Combine Rice and Water

  1. Add the soaked and drained rice to the pan. Gently mix to coat the rice with the spices.
  2. Pour in the water or vegetable stock. Stir gently and bring it to a boil.
  3. Reduce the heat to low, cover the pan with a lid, and let it cook for 12-15 minutes or until the rice is fully cooked and the water is absorbed.

Step 5: Final Touch

  1. Gently fluff the rice with a fork.
  2. Add the sautéed paneer cubes and mix carefully to avoid breaking the rice grains.

Step 6: Garnish and Serve

  1. Garnish with chopped coriander leaves and fried cashews.
  2. Serve hot with raita, pickle, or a side salad.

Tips for Perfect Paneer Pulao:

  • Use good-quality basmati rice for the best aroma and texture.
  • Sautéing the paneer cubes adds a nice flavor and prevents them from crumbling in the dish.
