How to Make Traditional Diwali Chivda?

Ingredients:

  • 1/4 cup roasted gram (chana dal)

  • 2 tbsp dry coconut slices
  • 2 tbsp raisins
  • 2-3 green chilies, finely chopped
  • 8-10 curry leaves
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp sugar
  • Salt to taste
  • 2 tbsp oil

Instructions:

  1. Roasting the Poha/Murmura:
    • Dry roast the thin poha or murmura in a wide pan on low heat for 3-4 minutes until crispy. Stir occasionally to avoid burning. Once done, transfer to a large mixing bowl.
  2. Tempering and Adding Crunchy Elements:
    • Heat oil in a pan and add mustard seeds and cumin seeds. Allow them to splutter.
    • Add peanuts and fry until golden brown.
    • Add roasted gram (chana dal) and fry for a minute.
    • Toss in cashews, almonds, and dry coconut slices, frying them until they turn golden.
    • Add chopped green chilies and curry leaves, sautéing until the chilies become crispy.
  3. Flavoring the Chivda:
    • Lower the heat and add turmeric powder, red chili powder, salt, and sugar. Stir well to mix the flavors.
    • Add raisins and sauté for a few seconds until they puff up.
  4. Mixing Everything Together:
    • Turn off the heat and immediately add the roasted poha/murmura to the pan.
    • Gently mix everything together so that the spices coat the poha evenly.
  5. Cooling and Storing:
    • Allow the Chivda to cool completely before transferring it to an airtight container. This helps maintain its crispiness.

  • Use thin poha for a delicate, crunchy texture.
  • Roast the poha/murmura on low heat to avoid burning and to achieve even crispiness.
